The domaine

Le domaine se situe sur Collioure pour 8ha ( grenache noir gris et blanc , vermentino , roussanne , mourvèdre et carignan , syrah) et sur Saint andré pour 17ha (grenache, syrah, carignan, muscat petit grain, xarel-lo, ...).
La cave de vinification est au milieu d'une parcelle à Saint André 


The vines

Tout est fait la main sur Collioure, au rythme de la vigne, labour au motoculteur ou cheval quand cela est possible sinon enherbement endémique et fauchage.
Sur Saint André tout est a la main avec l'aide d'un tracteur, pour les travaux du sol, mais juste le rang est travaillé à l'intercep.


Winemaking

Tout se fait le plus naturellement possible, avec le moins d'intervention sur les vins pour garder leur authenticité.
il est possible de sulfité légèrement une cuvée si elle le demande mais ca n'excède jamais plus de 20mg/l.
