Le domaine
Les Clos* des Pères** est situé à La Livinière, dans le Minervois sur les contreforts de la montagne Noire.
Nous avons 7 parcelles de vignes:
-*pour la plupart entourées de murs en pierres sèches,
-**elles appartenaient au père, grand-père et arrière grand-père de Julien.
Les vignes
Nos 7 parcelles sont sur des sols de différentes compositions à dominantes argilo-calcaire.
Le domaine se compose de plusieurs cépages : Vieux Grenache noir et Carignan, Grenache gris, Cinsault, Syrah.
Nous avons depuis quelques temps officialisé notre engagement à respecter le vivant. Toutes nos cuvées sont certifiées AB et DEMETER en 2020.
La vinification
La vinification est réalisée en cuve inox pour une extraction douce et lente des arômes. L'élevage est ensuite soigneusement adapté au millésime et au cépage afin d'accompagner le vin dans une lente maturation soit en cuve ou bien en barriques de plusieurs vins de 228 à 600 litres.Les vins
