Installés depuis 2017, nous tachons de faire le vin qu'on aime, sans intrant et avec amour!
Le domaine s'étend sur 3 ha dans la haute vallée de l'Aude, petits rendements pour un grand respect du vivant.
Les vignes
Un hectare de Carignan et Cabernet Sauvignon à côté de Limoux.
Deux hectares, Mauzac et Carignan à Couiza sur belle crête avec vue sur Rennes le Château et les monts d'Ariège.
Nous cultivons la vigne en agriculture bio tout en utilisant parfois des préparations biodynamiques, nous taillons en respectant les flux de sève et ne rognons pas, ps ou peu de travail du sol et le moins de cuivre possible.
La vinification
Nous vinifions sans intrant et avec modestie.
On apprend chaque jour grâce aux rencontres et aux expériences, c'est ça qu'est bon!Les vins
En 2017, on fait un rosé avec le Carignan, Vents d'Anges, porté sur le fruit et sanguin. Il nous en reste quelques bouteilles, venez goûter!
Et un rouge avec le Cabernet Sauvignon, Zou, 14,5°, des tannins, un vin du sud, de garde... Malheureusement y en avait pas beaucoup alors on a pas pu le garder!
En 2018, on fait deux rouges, un avec le Carignan, Caribou, vin de soif à 12,5° et un avec le Cabernet, en macération carbonique.
En 2019, trois rouges, un Carignan et un Cabernet légers et un assemblage vieilli en barrique pendant 4 mois.
En 2020, on remet ça pour les rouges et on ajoute un blanc, avec le Mauzac, Friche Style, léger, au goût de pêche.
