Le domaine a prit en 2018 la taille souhaitée : 1.6 ha en totalité sur la commune d'Ayent. l'encépagement se compose comme suit : arvine, amigne, chasselas (4 parcelles), chardonnay, pinot gris, gamay (3 parcelles), pinot noir, situées entre 590 et 840m d'altitude. Age des vignes entre 12 et 50 ans. Les sols sont composés de schistes d'éboulis mêlés de quartz et d'argiles et sur certaines zones de sables schisteux.The vines
Les vignes sont cultivées biologiquement, la 500p est pulvérisée au printemps. Nous ne souhaitons pas de label bio mais sommes contrôlés par un organisme bio (Bio-inpcta) sans demande de labélisation. 30% de la surface est travaillée ainsi depuis 2010, 70% depuis 2017 et 2018.Winemaking
Les raisins blancs sont foulés manuellement entiers puis mis en presse (pressoir horizontal à vis) sans rebèche pendant une douzaine d'heures. Fermentation spontanée, malolactique accomplie, un ou deux soutirages, élevage sur lies fines entre 4 et 24 mois selon la situation puis mise en bouteille par gravité sans aucun intrant. Les raisins rouges sont éraflés manuellement sur un crible de bois de hêtre, macération de 2 à 4 semaines, pigeages et remontages manuels puis mis en presse, fin de fermentation alcoolique en jus clair sur 2 à 3 semaines. Malolactique accomplies, 1 à 2 soutirages puis mise en bouteille par gravité après un élevage de 9 à 22 mois. Tous le vins sont élevés en cuve inox ou fibres, aucun contenant en bois.The wines
